VINIFICATION
Obtained from grapes from vineyards over fifty years old in the Primitivo di Manduria DOC area, the grapes are harvested at the end of August. Maceration follows for 15 days with numerous punching down and subsequently malolactic fermentation in barriques with subsequent refinement in Never and Troncais barriques for 12 months.
