VINIFICATION

White winemaking, with a yield no greater than 50-55%. After pressing, the rosé must undergoes primary fermentation, under strict thermodynamic control, at 13-15°C. The transformation of the must into wine continues in stainless steel, on the fine lees, until the end of October. The wine is then transferred to an autoclave for secondary fermentation, where the second fermentation takes place and it is subsequently aged on the lees for a total of approximately 120 days.
