WINEMAKING
Long Charmat (6 months). The grapes, harvested in boxes with a slight advance in ripening, were processed intact directly in the press and subjected to traditional white vinification with fermentation at rather low temperatures (14°C). The secondary fermentation in the autoclave took place in December and lasted approximately 1 month. The sparkling wines thus obtained remained aged on their lees for approximately 6 months before bottling.
