WINEMAKING

Scalding of the peel with carbonic snow with subsequent crushing, soft pressing and static decantation for approximately 24 hours. Fermentation in stainless steel vats at a temperature of 14°C and refinement on yeast lees with continuous bâtonnage for at least two months.
