WINEMAKING

Manual harvesting and selection of grapes on a sorting table. Destemming and soft pressing. Maceration for 8-10 days at a temperature of 25°C. Alcoholic and malolactic fermentation in stainless steel tanks at controlled temperatures. Maturation in 30hl oak barrels and brief refinement in the bottle.
