WINEMAKING

The harvest takes place, partly manually and partly by machine, in the early hours of the morning during the first ten days of September. After being pressed, the grapes ferment at a controlled temperature in steel tanks with maceration for 14 days and scheduled pumping over. Once malolactic fermentation is completed, a part of the wine matures for 6 months in second and third passage French barriques, while the remaining part remains in steel.
