VINIFICATION

Harvest takes place at night to preserve as much acidity as possible and to proceed with fermentation during the coolest hours of the day, avoiding sudden temperature changes. After crushing and gentle pressing, to prevent oxidation, the grapes ferment at a controlled temperature for 15 days in steel tanks.
