WINEMAKING

For Malvasia Nera di Lecce, the harvest takes place manually in the early hours of the morning during the third ten days of September, followed by a light drying. Syrah is harvested by machine during the first ten days of September. After being pressed, the grapes ferment separately at a controlled temperature in steel tanks with scheduled pumping over. Once malolactic fermentation is completed, only the Malvasia continues aging in wood for 6 months while the Syrah remains in steel.
