VINIFICATION

For the Malvasia Nera di Lecce, the grapes are harvested by hand in the early morning hours during the last ten days of September, followed by a light drying process. The Syrah is harvested by machine during the first ten days of September. After pressing, the grapes ferment separately at a controlled temperature in steel tanks with scheduled pumping over. Once malolactic fermentation is complete, only the Malvasia continues to age in wood for six months, while the Syrah remains in steel.
