WINEMAKING

The grapes were harvested by hand in the early hours of the morning, in the warm and sunny vineyards around the Castello Monaci cellar. In the cellar the freshly pressed product is immediately cooled and kept cold for a few days in order to preserve all the intrinsic characteristics of the primitivo. The vinification, with a maceration of approximately 15 days, is characterized by a skilful use of frequent, but non-invasive pumping over and by a skilful use of temperature games: all of which gives the wine an elegant and at the same time modern structure. After malolactic fermentation, the product remained to mature for approximately 6 months in small oak barrels and 6 months in large barrels. This is then followed by refinement for a further 6 months in glass.
