WINEMAKING

After being pressed, the grapes ferment at a controlled temperature in steel tanks with maceration for 14-16 days and scheduled pumping over. Once malolactic fermentation is completed, the wine is left to mature in first and second passage French barriques for 12 months. This is followed by further aging in large barrels (57hl) for another 12 months. Finally it rests for 6 months in the bottle in an air-conditioned environment.
