DESCRIPTION

Castello Monaci Aiace Salice Salentino DOC Riserva is the fruit of the renowned Apulian winery. Produced with select grapes, this Riserva offers an elegant combination of flavors and aromas typical of Southern Italy. An unmissable choice for lovers of quality wine.

VINIFICATION

After being pressed, the grapes ferment at a controlled temperature in steel tanks with maceration for 14-16 days and scheduled pumping over. Once malolactic fermentation is complete, the wine is aged in first- and second-use French barriques for 12 months. This is followed by a further 12 months of refinement in large barrels (57hl). Finally, it ages in bottle for 6 months in a climate-controlled environment.
